Cheesy Kale Chips! (v/gf)

I constantly am buying kale chips from the store (my favorite brand here) and finally decided I just needed to make some myself. So if you have 30 minutes, want a healthy alternative to chips, and want a nutritionally packed snack- this ones for you.

Just one serving has ~150 calories, 7 grams of protein, and 4 grams of fiber! Also naturally rich in folate, B vitamins, and iron. For those of you who aren't familiar with nutritional yeast, it is a deactivated yeast (Saccharomyces cerevisia) that has a rich nutty/cheesy flavor. It's great as a popcorn topper, can mix into make a great queso, or be a great salad flavor as well. It's naturally rich in B vitamins and is often supplemented with vitamin B12. It is also a source of all 9 of the essential amino acids (the ones your body does not produce). Welcome to your new favorite snack!


  • About 9oz chopped kale leaves. I used 2 bunches from Sprouts and it was perfect. Or if you want an easy measure- 1 whole pack of pre-washed and chopped baby kale (washed and stems removed!), organic preferred

  • 2 Tbsp olive oil (or sub another plant-based oil)

  • 1/2 cup raw sunflower sweets (unsalted preferred)

  • 1/4-1/3 cup nutritional yeast

  • 1 lemon, juiced

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp garlic powder

  • Dash of smoked paprika (optional)


  1. Preheat oven to 300 degrees F

  2. Add kale and oil to large mixing bowl and mix until covered

  3. Pour sunflower seeds, half of the nutritional yeast, lemon juice, salt, pepper, garlic & smoked paprika (optional) to a blender or food processor

  4. Add mixture to kale & hand toss to coat

  5. Spread kale over 2 large baking sheets, making sure to have as few overlapping as possible

  6. Sprinkle with remaining nutritional yeast

  7. Bake for 15 minutes. After 15 minutes, flip/mix kale with a heat-safe spatula and then bake 5-7 minutes more until crispy and golden

  8. Let cool before serving

  9. Make sure they are completely cooled before storing. They'll keep for 2-3 days but the crispness starts fading after a loud a day. They're so tasty you may have trouble saving any!
